Yummy! I've been craving enchiladas lately...this sounds so good. Did you make the sauce from scratch?

And I freakin' love black rice! Its so nutty!

Hell yeah i made the sauce from scratch, then I slowly simmered the seitan in the sauce for a few hours. i even made the corn tortillas from scratch with my new handy dandy tortilla press.
