Heirloom Tomato & Toasted Pepita Migas Tacos on Whole Wheat Tortillias

This is my version of a dish I first fell in love with in Austin, TX at a place called "Juan in a Million." Migas Tacos usually have fried corn chips mixed into the egg. While this is delicious, it is not the healthiest way to start the day. I replaced the chips with toasted pumpkin seeds and the sour cream with greek yogurt. It is just as good and way better for you.

Juan in a Million?! Love that. Way to go making this healthier with pumpkin seeds...though my fat ass would have likely used the corn chips.
