Buckwheat Pancakes

We finally found pancakes that we both like! There's more to them than just flour and sugar, and the texture that the buckwheat adds is great.

Buckwheat Pancakes
(adapted from How it All Vegan, a copy of which is so well-loved around here that it is completely falling apart)

1 cup of buckwheat flour
1 cup AP flour
1 tbsp. baking powder
1 tsp. cinnamon
1 tsp. vanilla
2 eggs
1/2 cup applesauce
2 cups water

Mix dry, add wet, and stir until just blended. Add a little butter to a medium-low griddle, and use a 1/2 measuring cup to pour on batter. Wait until they've stopped bubbling and then flip. We added some warm cinnamony bananas, macerated strawberries, maple syrup, and brown sugar whipped cream.

I just got How It All Vegan as a gift. Have you tried the vegan version of the buckwheat pancakes? I have yet to find a vegan pancake that I love (quite possibly the reason you adapted it to no longer be vegan!) :)

The Brainless Banana Pancakes on the same page of HIAV as the buckwheat recipe are good. Not really fluffy, but good.
