Adjusting to Life as a Part-Time Vegan

I am no longer frustrated with finding vegan food for lunch. I have adapted quite nicely. Here is a gallery of some of the things I have made for lunch over the past few weeks.

all of these pictures make my mouth water! especially that tempeh sandwich.

being vegan isn't hard. you just need to "adapt nicely" like you said you have been. for me, the hardest part about making the switch was just getting out of the habit of grabbing something off the shelf and eating it. i've been vegan for less than a year (october will a year) and i love it, i wish i did this a lot sooner!

That fried green tomato po'boy looks so good. Is there a sauce that you used,if you don't mind sharing.. or is it just the caramelized onions that contribute a 'wetness'? Beautiful photos.

ditto on the po boy! when i was an omni, i was crazy for shrimp po boys, and i just fried my first green tomato yesterday so i'd LOVE to recreate this. any pointers?
