Dutch Baby
2 eggs
1/2 cup flour
1/2 cup milk
1 teaspoon sugar
1/4 teaspoon salt
pinch nutmeg
2 tablespoons butter
Preheat oven to 425 degrees. Place a 10-12 inch frying pan into the oven with the butter. Once the butter melts, pour the batter into the pan and return it to the oven for about 15 minutes or until golden brown.
Filling:
1 1/2 cups sliced strawberries
1/8 cup sugar
1/2 cup ricotta
2 teaspoons honey
1 tablespoon cane sugar
1/2 teaspoon vanilla paste
1 tablespoon milk
1/2 a lemon
tablespoon of powdered sugar
Mix strawberries with 1/8 cup sugar and set aside. Whisk together the ricotta, honey, sugar, vanilla, and milk until well incorporated. Spoon the strawberries into the dutch baby, top with cheese mixture, squeeze the lemon on top, and sprinkle with powdered sugar. No real need for those forks; as you see in the photograph, you might as well just tear into it using your hands. Hmmm...I wonder what I'll put in tomorrow's Dutch baby.

I'm a vegetariam because it is the best choice for me. I feel healthy and strong eating this way. I'm not an activist; I'm just a guy who loves to eat. Thanks for looking!

oh, this dessert looks so tempting! Today my girlfriend cooked me some delicious cupcakes with nuts and raisins, i ate like 7 of them and now i am looking at this dessert and i could't ressist to it! I worship dessert coockers :)

Dutch Babies are awesome! We like sauteed apple slices (in butter with a sprinkle of cinnamon or not) and dried cranberries in the middle--and maybe a few carmelized chopped walnuts. Will have to try strawberries tho--looks yummy!

Just finished making (and eating!) this with my husband, it is SO GOOD. We just used icing sugar on top as we don't have any fresh berries or ricotta in the house. It was amazing and so easy to make! Thanks so much!

That is called a German Pancake in my mom's house. She serves it for breakfast with powdered sugar, melted butter, and maple syrup.

Growing up, we called these pop up pancakes. We would bake them in glass pie pans. I still make them occasionally for my kids. However, I have never thought of filling it with yummy strawberries and such! I'll have to try that!

FYI, Dutch Baby's also make a great savory dish. Omit the sugar and make a topping of your choice. I like sauteeing up a wild mushroom mixture. Delicious!
I,ve made these for breakfast, filled with bananas, toasted pecans and maple syrup.
Okay so I fell in love with how this dessert looked- until I tried to make it at home. I did it twice and neither time did the "edges rise up." I tried adjusting my temperature, whipping the eggs just right, and everything- just was NOT successful. Is there a trick to this? I thought I was a good baker until I tried to make this :-(
No trick. Are you using a non stick pan? That may affect the pancakes ability to climb. Not sure. Preheat the oven. Give it another shot.
Also make sure you aren't using too large of a pan...
