TCV Cheese Plate (with less cheese!)

There is nothing like pausing for a nice cheese plate after a trying day. We're attempting to eat a little less cheese, though, probably because we love it so much and may just need to appreciate it more. This was such a wonderful, serendipitous, hurried creation that turned out well. There's nothing like a stocked pantry to make it easy to throw something nice together out of what you have on hand! Here's what we used to create it in five minutes flat:

Parmesan shavings

Olive oil, cracked black pepper, and
Kosher salt

Apricot jam (warmed in the microwave for a few seconds)

Marcona almonds

Whole wheat bread (toasted)

California green ripe olives

Looks good. But Parmesan isn't a vegetarian cheese...
